Kamal Masi’s Sumptuous Salads: Eating Healthy in Communal Living

Salad #1

Spinach, Strawberry, And Pecan Salad

Ingredients

  • 1 large bushel of spinach
  • 10–15 strawberries
  • 1 ½ cups pecans
  • Raspberry balsamic vinaigrette (to taste)
  • ½ red onion (optional)
  • Feta cheese (optional)
  • Salt and pepper

Instructions

  • Wash and chop spinach
  • Peel and chop red onion
  • Wash strawberries and chop in half lengthwise
  • Crush pecans
  • Combine all ingredients in salad bowl
  • Add salt and pepper (to taste)
  • Sprinkle with feta cheese (optional)
  • Add raspberry balsamic vinaigrette (to taste)
  • Mix and serve
  • Enjoy!

Kale, Apple, Walnut, And Cranberry Salad

Ingredients

  • 1 large bushel of green kale
  • 1 large red delicious apple
  • ½ cup of dried cranberries
  • 1 ½ cups crushed walnuts
  • 3 tablespoons apple cider vinegar (to taste)
  • 2 tablespoons olive oil (to taste)
  • ½ red onion (optional)
  • Salt and pepper

Instructions

  • Wash kale, chop leaves (compost the stems)
  • Wash apple and cut into thin slices
  • Peel and chop red onion
  • Crush walnuts
  • Combine all ingredients in salad bowl and sprinkle with cranberries
  • Add salt and pepper (to taste)
  • Add olive oil and apple cider vinegar (to taste)
  • Mix and serve
  • Enjoy!
