Kamal Masi's Aloo Gobhi Recipe: Cooking in Community Living

Kamal Masi's Aloo Gobhi Recipe

Ingredients

  • 3 small potatoes
  • 1 small head of cauliflower
  • 1 onion
  • 5 cloves of garlic
  • 2 cubes of ginger
  • 6 green chili peppers (to taste)
  • 6 stems of fresh coriander
  • 1 tablespoon cumin seeds
  • 1 teaspoon salt (to taste)
  • 1/4 teaspoon black pepper
  • 1 teaspoon turmeric
  • 2 tablespoons vegetable oil

Instructions

  • Chop all of the vegetables (including the cauliflower stems)
  • Heat the oil and cumin seeds in a frying pan. Add the garlic, onions, ginger, chili peppers, and potatoes, stir until brown
  • Add salt, pepper, turmeric, and the rest of the veggies
  • Cover and cook on low-medium heat, stirring occasionally for approximately 20 minutes
  • Once the potatoes are tender, add the coriander
  • Serve in bowls along with roti, naan, or rice
  • Enjoy!
