The first thing I ever learned to cook was the quintessential Punjabi dish Aloo Gobhi. Aloo Gobhi, literally potatoes and cauliflower, is an old favorite in pretty much every household, especially mine!

If you tried my Khichdee recipe last month you know you’re in for a real treat. And if you haven’t, try this anyway because my recipes are the talk of the town!

KAMAL MASI'S ALOO GOBHI

Serving Size: 6 bowls

Prep Time: 30 minutes

Ingredients:

  • 3 small potatoes

  • 1 small head of cauliflower

  • 1 onion

  • 5 cloves of garlic

  • 2 cubes of ginger

  • 6 green chili peppers (to taste)

  • 1/2 tomato

  • 6 stems of fresh coriander

  • 1 tablespoon cumin seeds

  • 1 teaspoon salt (to taste)

  • 1/4 teaspoon black pepper

  • 1 teaspoon turmeric

  • 2 tablespoons vegetable oil

Instructions:

  1. Chop all the vegetables (including cauliflower stems)

  2. Heat the oil and cumin seeds in a frying pan. Add the garlic, onions, ginger, chili peppers, and potatoes. Stir until brown

  3. Add salt, pepper, turmeric, and the rest of the veggies

  4. Cover and cook on low-medium heat, stirring occasionally for approximately 20 minutes

  5. Once the potatoes are tender, add the coriander

  6. Serve in bowls along with roti, naan, or rice

  7. Enjoy!
