When it’s cold outside there’s nothing better than a warm bowl of soup. Unless you’ve met our Kamal Masi! Then there’s nothing better than a warm bowl of her famous Khichdee.

KAMAL MASI'S FAMOUS KHICHDEE

Serving Size: 6 bowls

Prep Time: 35 minutes

Ingredients:

  • 1/2 cup basmati rice

  • 1 cup daal (yellow lentils)

  • 6 cups water

  • 2 tablespoons olive oil/vegetable oil

  • 1 teaspoon salt (or more, to taste)

  • 1 onion

  • 1 tomato

  • 4 cloves of garlic

  • 4 slivers of ginger

  • 1 teaspoon cumin seeds

  • 1 handful fresh coriander (to taste)

  • 5 green chili peppers (to taste!)

Instructions:

  1. Bring water to boil in a large pot

  2. Rinse the lentils and rice together

  3. When the water begins to boil, add the rice and lentil mixture. Bring the heat down to medium and cook uncovered for 25-30 minutes, stirring occasionally

  4. While the lentils and rice are cooking, chop the garlic, onion, ginger, green chili peppers, and tomato

  5. Heat oil in a frying pan on medium heat

  6. Add cumin seeds, stir in the chopped vegetables, and cook until light brown

  7. Add salt

  8. Chop the coriander and add it to the vegetables

  9. Remove from heat

  10. Add the vegetable mixture to the cooked rice and lentils, and stir on low heat for 5 minutes

  11. Place into bowls and serve

  12. Enjoy!
