Summertime means fun in the sun and being outdoors as often as you can be. Nobody wants to be stuck in a hot kitchen preparing food. Hence my staple meal, which is an essential for picnics, pool parties, and BBQs: SANDWICHES! 

Yes, sandwiches. I'm not talking about run-of-the-mill sandwiches. I'm talking about the most tasty and yet easy-to-prepare sandwiches. Since the ingredients are all veggie/vegan friendly and you can substitute corn tortillas or lettuce wraps for bread, they are an inclusive dish for almost everyone. 

Best of all, most of the veggies I use are grown right here in our communal garden at Priya Living!

Each recipe makes 4 sandwiches

Prep Time: 10 minutes

SANDWICH #1: TOFU SALAD SANDWICH

Ingredients:

  • Bread (I use sourdough, but you can use whatever you like, even tortilla wraps or lettuce leaves)

  • 1 package of firm tofu

  • Vegan mayonnaise 

  • Yellow mustard

  • Salt and pepper

  • 2 celery stalks 

  • 1 tomato

  • 1 green chili

  • 5 coriander stems

  • Alfalfa sprouts 

Instructions:

  1. Wash all the veggies (except for the alfalfa sprouts), chop finely, and place into a mixing bowl

  2. Crush the tofu into the bowl (I use my hands to squish it!)

  3. Add salt and pepper to taste

  4. Add 1 tablespoon vegan mayonnaise (or more to taste)

  5. Squirt a few globs of mustard into mixture

  6. Toast bread. Spread the mixture evenly over one slice. Top with alfalfa sprouts and then cover with a second slice of bread

  7. Chop diagonally and serve!

SANDWICH #2: “COLD CUT” VEGAN SANDWICH

Ingredients:

  • Bread (I use sourdough. But, again, you can use whatever you like, even tortillas or lettuce leaves)

  • 1 package of vegan cold-cuts (meatless salami, turkey, and chicken are available at most grocery stores)

  • Vegan mayonnaise 

  • Yellow mustard

  • Salt and pepper

  • 4 kale leaves

  • 1 tomato

  • Alfalfa sprouts

Instructions:

  1. Wash the veggies (except for the alfalfa sprouts)

  2. Chop tomato into circular slices

  3. Chop kale 

  4. Toast bread 

  5. Spread 1 tablespoon of vegan mayonnaise onto two slices of bread, add salt and pepper to taste

  6. Squirt a few globs of mustard onto both slices and spread

  7. Top with alfalfa sprouts and then cover with a second slice of bread.

  8. Chop diagonally and serve!

SANDWICH #3: FRESH AND MINTY CUCUMBER SANDWICH

Ingredients:

  • Bread (I use sourdough. But you can use whatever you like!)

  • 1 English cucumber 

  • A few mint leaves

  • Vegan mayonnaise 

  • Salt and pepper

Instructions:

  1. Wash the veggies 

  2. Chop mint leaves into tiny pieces

  3. Slice cucumber into circles

  4. Toast bread and spread with 1 tablespoon of vegan mayonnaise. Add salt and pepper to taste

  5. Add a few pinches of mint leaves and then layer with cucumber slices 

  6. Cover with a second slice of bread

  7. Chop diagonally and serve!
